When Peter and I first started eating paleo a few years back, I was deeply struggling with my sweet tooth. Lucky me, he made me banana paleo ice cream. It was so damn good, I could have slapped my mom (sorry Joan). I haven't really had much of a sweet tooth or experienced many sweet cravings recently, but for some reason tonight, after eating my sautéed shrimp with beets and beet greens, kale and avocado, I had a hankering for that banana ice cream once again.
we started with 7 bananas and sliced them up and put them on a sheet pan in the freezer
you'll want to have some cinnamon and coconut milk handy. If you have time, put the coconut milk in the freezer too, just so you're not mixing room temperature coconut milk into frozen bananas.
toss it all in the food processor. About 2 tsps of cinnamon.
If the bananas are not breaking down easily, you might want to add a little water.
Now get prepared to slap your mother.
If you don't eat it all in one fatty sitting, you can store the rest in the freezer. Just toss the tupperware into the fridge an hour before you want to eat it.
